Herb Roasted Red Potatoes

A good side dish that compliments a meal nicely is always a treat! I serve these potatoes along side beef, typically. I started making these at Christmas for our family dinner, hosted at our house. They are simple and satisfying and go perfectly with my Red Wine Pot Roast!

The morning of, I will throw the potatoes in a large bowl of water to soak through out the day until I am ready to cook them. Then I cut them in half or quarters and toss all of the ingredients together, spread them onto a pan and bake. Easy! Seriously. And SO GOOD.

These are my go-to roasted potatoes for holiday meals or special occasions! They are so full of flavor, simple to make and definitely offer up a wow-factor for guests!

Ingredients
  1. 2 lbs baby red potatoes, halved
  2. 2 T olive oil
  3. 3/4 cup parmesan cheese, shredded
  4. 4 cloves garlic, minced
  5. 1/4 cup fresh parsley, chopped
  6. 2 T fresh rosemary, chopped
  7. 1/2 tsp sea salt
  8. 1/2 tsp ground black pepper
Instructions
  1. I soak the potatoes for a few hours in some water before cooking - pro tip 🙂
  2. Preheat oven to 400 degrees F
  3. Spray your baking sheet with some extra virgin olive oil and spread evenly to coat
  4. Wash and cut potatoes in halves or quarters, depending on size. Put them into a large bowl.
  5. Toss potatoes in 2 T extra virgin olive oil.
  6. Add Parmesan, garlic, parsley, rosemary, sea salt and pepper and mix well until potatoes are coated.
  7. Spread potatoes evenly over the pan and bake for 25 minutes.
  8. Toss the potatoes and then bake for 20 minutes more until edges are golden.
  9. Serve and enjoy!

  1. 1 Yellow, 1 spoon, 1/4 blue
  2. I am not sure EXACTLY how many 'FIX' servings this makes, but measure your potatoes out in your yellow container and check off your containers accordingly! 🙂
  3. *I doubled this recipe for 6 adults and a child at Christmas last year and there were leftovers

    I made these without the cheese, without the salt, and used dried parsley and rosemary (not fresh). Very good, thanks!
