Ground Beef and Veggie Stuffed Acorn Squash

Fall is just around the corner and who doesn’t love a little bit of comfort food every now and then? I really enjoy acorn squash! It was one of my ‘new foods’ of the week a few weeks ago so it is all new to me! When I first tried it, I made acorn squash ‘fries’ and loved them. I was excited to try another recipe using this squash. I came up with this Ground Beef and Veggie Stuffed Acorn Squash dish which is 21 Day Fix AND 21 Day Fix Extreme approved, too! Nothing crazy and super easy!!

Ground Beef & Veggie Stuffed Acorn Squash

Essentially, this meal involves roasting a squash, making a skillet meal with meat and veggies and then stuffing the meat and veggies into the squash with some cheese. I chose Feta (I know you are all shocked) but I think it would be excellent with some shredded mozzarella to make it ooey gooey. This one is veggie packed and will leave you FULL! I hope you enjoyed it as much as I did – Basili dislikes squash but liked this one enough to ‘approve’ it for the blog. He said there was a lot of flavor and he didn’t HATE the squash. (celebration!!!)

Ingredients
  1. 2 Acorn Squash
  2. 2 tsp coconut oil
  3. 1 lb lean ground beef
  4. 1 1/2 tsp sage
  5. 1 1/2 tsp oregano
  6. 1/2 tsp parsley
  7. Salt & Pepper to taste
  8. 3 cloves garlic, minced
  9. 1/2 cup onion, diced
  10. 1/2 cup zucchini, diced
  11. 1/2 cup tomatoes, diced
  12. 1/2 cup green pepper, diced
  13. 1 cup crushed tomatoes
  14. 1 sweet potato, peeled and diced
  15. 1 cup Feta or Mozzarella cheese
Instructions
  1. Preheat oven to 400 degrees F
  2. Place 1/2 inch of water in a large baking dish, slice acorn squash in half and carve out the seeds. (4 halves) If the squash cavity is really small, cut some of the squash out to make the cavity larger and add it to your meat mixture!
  3. Add 1/2 tsp coconut oil to each half
  4. Roast for 60-70 minutes until cooked through and fork tender.
  5. While squash is roasting, in a 12" skillet, brown the beef and add seasonings and minced garlic.
  6. Dice the onion, zucchini, tomato and green pepper, add them to the skillet once the meat is almost browned completely. Stir in veggies and saute for a few minutes until onions are translucent.
  7. Stir in crushed tomatoes and diced sweet potatoes. Cover and let simmer on medium low. Stir occasionally.
  8. When acorn squash is ready, fill each half with 1/2 cup of meat and veggie mixture, add 1/8 cup cheese, then another 1/2 cup meat and veggie mixture and top with another 1/8 cup cheese.
  9. Repeat for all halves and place baking pan back into the oven for another 7-10 minutes until bubbly.
  10. Enjoy!

  1. 1 Red, 1 1/2-2 Green (depending on Acorn Squash size), 1/2 yellow, 1 blue, 1/2 tsp
Notes
  1. If you want to add different veggies in, AWESOME! This is what I had in my fridge and needed to get rid of them before they went bad! Spinach would be good in this too!
  2. For the time on this recipe, it really only takes a long time because of roasting the squash in the oven. It is truly a simple 'throw everything into the skillet' kind of recipe. Just fancied up a little.
