Herb & Dijon Crusted Beef Roast

One thing I love more than my slow cooker is a good pot roast on a cold day! There is something about walking into your home after being out and about all day and it smelling like you have been cooking for hours. Family and even toddler approved!

Ingredients
  1. 2 cups carrots
  2. 3-4 lb, beef roast
  3. 3 cloves garlic, minced
  4. ¼-1/2 cup Dijon mustard
  5. 2 tsp Rosemary
  6. ½ tsp pepper
  7. ½ tsp thyme
  8. 1 (14.5 oz) can diced tomatoes, drained
  9. ½ yellow onion, sliced
  10. 1-2 cups chicken broth, low sodium
  11. Sea salt, to taste
Instructions
  1. Place carrots in slow cooker.
  2. Place beef roast on top of the carrots. Rub roast with all of the seasonings. Add Dijon.
  3. Add onions and pour can of diced tomatoes over beef roast and broth around the roast.
  4. Cover and cook on low for 8 -10 hours.
Notes
  1. Serve with a side of roasted asparagus.
