I LOVE this recipe! Not only is it super easy and quick, but it is packed FULL of flavor and it is SO versatile! Serve it up on a whole grain tortilla, over a bed of brown rice or just with some veggies! Easy peasy and delicious!
Slow Cooker Cilantro Lime Chicken

Ingredients
- 3 large boneless, skinless chicken breasts
- Juice of 1 lime
- 2-3 T Olive Oil
- 1/2 yellow onion, chopped
- 1 cup fresh Cilantro, chopped
- 2 cloves garlic, minced
- 1t Chili powder
- 1 bag frozen 3 pepper & onion blend (no sugar added)
- Sea salt & pepper to taste
Instructions
- Place all ingredients into your slow cooker
- Cover & cook on low for 5-6 hours until chicken shreds easily with a fork
Notes
- Top with fresh avocado and serve with 1/2 a sweet potato and some veggies.
- Fix Container Counts: 1 R, 1/2 G (depending on how many of the veggies you dish out from your slow cooker), 1 tsp.
