Looking for a treat that will satisfy that sweet tooth of yours on the 21 Day Fix? You absolutely need to try these pumpkin brownies! I will caution you, you are allotted ONE brownie (this recipe makes 16) which would be equivalent to one yellow treat swap. The macros on these bad boys are right in line with what a ‘treat’ should be on the 21 Day Fix – just because it is ‘clean’ doesn’t always mean it is 21 Day Fix approved! I entered the ingredients into My Fitness Pal and am happy to report they pass the test! Nutrition Information

My good friend Sarah made these and passed the recipe along to me and since MY family loved them, I want to share them with all of YOU too! 🙂 Treats are a hard one for me – I LOVE baking and my husband LOVES baked goods, but lets be honest – healthy baking just doesn’t cut it sometimes!! These brownies are different though! Yes, you can tell they aren’t Betty Crocker, but KNOWING what is going into them and KNOWING that they are a healthy, clean alternative makes them taste even better!

These brownies are so rich and moist - and guilt free!! 🙂 These are 21 Day Fix approved and delicious for when you are wanting a sweet treat. My husband and boys loved them too!

Ingredients
  1. 1/3 cup Coconut Flour
  2. 1/3 cup Cocoa Powder
  3. 1/3 cup Pure Pumpkin Puree
  4. 1/4 cup Coconut Oil
  5. 2 tsp Pure Vanilla
  6. 4 eggs
  7. 1/2 cup Pure Maple Syrup
Instructions
  1. Preheat oven to 350°F
  2. Combine coconut flour and cocoa powder
  3. Whisk in the pumpkin, coconut oil, eggs, maple syrup and vanilla extract. Blend well.
  4. Pour batter into a 9 x 9 greased pan, and bake for 28-35 minutes, until toothpick comes out clean
  5. Let cool completely before removing from pan

    I added the pumpkin in at the end because it wasn’t in the instructions, not sure if that makes any difference but wanted to let you know it’s not in the recipe!

    Could we sub almond flour for the coconut flour? I just spent a small fortune on it and don’t have coconut flour.

      Hi Brandi, you CAN, but note that they are not a 1:1 ratio. Coconut flour tends to absorb more moisture than almond flour, so use less of the liquid ingredients (or add them as you are stirring to get to the consistency of brownie batter! 🙂 Angela

        Make your own almond flour. Plain almonds in blender. I refuse to pay $10 for a very small bag. I pay $15 for 3 lb bag of plain almonds at Sam’s and make almond flour weekly. I get 1.5 cups almond flour per 1 cup almonds.

      Hi Lisa! 🙂 There was a section in the My Fitness Pal app where you can enter in the ingredients for a recipe to get the macros per serving (pretty awesome!) Angela

        Hi! I’m new to the 21 day fix and trying to simplify my meal planning. I have my fitness pal app, so you have the premium version to get the macro nutrients for recipes? Once you get those macronutrients, how do you conclude that they are 21 day fix approved? Thanks for any help you can share…thank you!

          For the yellow treat swap – I like to keep it around 100 calories.

    Yum!! Yum yum yum! So excited to try these! What would you recommend for those of us that can’t have sugar (even maple syrup, sob!)? Using stevia to sweeten and adding water for moisture? It’s the only thing that comes to mind. Thanks!

      Hi Camille! 🙂 I have not tried this, but my first thought is apple sauce. I have no idea how they would come out, but it might work?! Let me know what you decide to do! 🙂 No sugar! You are the 3rd person I have talked to that can’t have any sugar in just the last week! 🙁 Angela

    Can you sub whole wheat flour?

      HI Mary! Coconut flour absorbs A LOT of liquid and the substitution with whole wheat is not 1:1. Substitute 1/4-1/3 cup coconut flour for 1 cup whole wheat flour. You will also need o decrease the amount of liquid. I would recommend grabbing the coconut flour at the store! Baking is such a science! 🙂 I haven’t mastered it yet, but I am learning! 🙂 Angela

    I have made these a few times before, but I only add 2 ingredients, a box of brownie mix, and a can of pumpkin. Put it in the oven for about 20 minutes 375, and done. 2 simple ingredients, but you have the tastiest treat ever! Give it a try if you wish.

    Do these freeze well since I could only have one a day with 21 Day fix?

      That is a good question – I am not sure! Basili usually helps in the ‘eating brownies’ department, so they are usually gone fairly quickly around here…I would think you could freeze them though!

      They do have a little bit of a pumpkin-y texture, but it is more of a dark chocolate taste – we really enjoy them!

    Awesome brownies I did not have coconut flour or coconut oil so used ground almonds and rice bran oil. Funny thing was (I had not read these comments) the mixture was far too wet so I ended up adding an extra packet (of ground almonds) and after reading through this I now know why! Good info on the coconut oil absorbing so much liquid. I shared with a few friends without telling them how they were made and only a couple didn’t like them. Perfect for my gluten and dairy free friend 😊

    I made these using 1/3 honey rather than 1/2 maple syrup. They came out great!
