Unstuffed Cabbage Rolls

Ok, I GET IT! You hear cabbage and think, ‘Next’. GIVE THIS ONE A SHOT! It is really good!! I told Basili (my husband) we were having Unstuffed Cabbage Rolls and he kind of scoffed at the idea of cabbage rolls and told me he would order a pizza if he didn’t like them. Challenge accepted. He tried it and proceeded to have a second bowl! I was pleasantly surprised with how much I enjoyed them too! Even Noah, our 1 year old, was asking for more!

What I like even more than the taste was that this recipe was SO simple! It is a one-skillet meal and was really quick! I did prepare some brown rice for Basili, so that required a separate small pot. 🙂 I topped this dish with some cheese and BOOM, dinner.

Based on a readers comments, I made this recipe again and reduced the amount of salt I added to the dish – it was even MORE delicious because I didn’t feel like I had consumed a bunch of sodium afterwards. I went ahead and adjusted the salt amount down to 1/2 teaspoon. As always, season to YOUR liking. 🙂

This one is a winner, for sure!

Unstuffed Cabbage Rolls

Such an easy and satisfying meal! My family really enjoyed this. It is a recipe FULL of flavor and lots of meat and veggies!

Ingredients
  1. 1 1/2 lbs lean ground beef
  2. 1 large onion, chopped
  3. 1/2 large or 1 small head of cabbage, chopped
  4. 1/2 cup low sodium chicken broth
  5. 1 tsp pepper
  6. 1/2 tsp sea salt
  7. 1 tsp oregano
  8. 1 (14.5 oz) can diced tomatoes, drained
  9. 1 (8 oz) can tomato sauce
  10. 2 cloves garlic, minced
  11. Shredded Monterrey Jack Cheese
Instructions
  1. In a 12" skillet, brown beef on medium high heat. Stir in chopped onions and cook until onions are translucent and beef is cooked through. Drain and discard grease. Add cabbage, tomatoes, tomato sauce, broth, and spices and bring to a boil. Reduce heat and cover for 30 minutes. Simmer until cabbage is tender.
  2. Top with cheese after plating to control the amount of cheese you are eating.
Serving Suggestions
  1. Serve over brown rice, topped with cheese.

  1. 1 Red, 1 Green for 1 1/2 cups + 1 blue for cheese (depending on how much you use)
  2. Optional - 1 yellow for brown rice

      Hi Jodie! I measure out 1 1/2 cups and call it 1 green and 1 red. Then I top with 1 blue of shredded cheese. 🙂 This recipe serves about 6. Enjoy!

    Made this tonite. Start 21 day fix tomorrow. It was great. First time kids tried cabbage. I will omit the salt next time and just season to taste at the end. Will make again. Very filling. Thanks for the recipe!

      1. My man and I are both doing the 21 day fix. So I was wondering do I have to make my portion of meat separate? I don’t know how much to put on my plate…

          Hi Sophia! For this particular recipe, it calls for 1 1/2 pounds of ground beef – so this will give you roughly 6 red servings – so you will eat 1/6 of the food in the skillet. If it makes it easier, do 1 pound of ground beef and divide your pan into 4ths. I actually made this tonight. 🙂 Make sure the meal is mixed well before serving. The way I make my recipes, things MAY not be measured EXACTLY to a T – BUT I can tell you that this is part of my lifestyle – this is how I cook for my family AND myself while staying accountable to the nutrition part of the program. And it has been working. 🙂 I hope this helps!

    To make it vegetarian, can I just leave out the chicken or should I better replace it with something?

      Hi Marloes, to make it vegetarian, you would leave out the beef and use vegetable broth instead of chicken broth. I am not vegetarian, so I am not familiar with the tastes/textures of the meat substitutes, but I would think you could add the veggie crumbles and or some chopped zucchini, too.

    I’m new to the 21 day fix, in the book I received it didn’t seem like you should use canned items, for example the canned chicken broth, diced tomatoes, and tomato sauce. How does these items effect the container counts? Will this impact results since they are not quite whole food/clean? Sorry for the totally nube question.

      That is an awesome question, Teasha! Welcome to the 21 Day Fix, by the way! Fresh is always best, of course. Canned and frozen are fine too – now I will say this, the ONLY canned items I buy are no salt added tomatoes/tomato sauce, low sodium broth and low sodium beans. The only reason you want to avoid canned is because of the salt content. This is how I eat daily, and I have had wonderful results with the program. 🙂
