Southwest Scramble

This morning when I went to make my breakfast, I realized I was out of spinach.  (OH NO!!!)  I had some grilled veggies left over from dinner last night so I diced them up and threw them on the skillet with my eggs and scrambled them up.   YUM!   Nothing like a little southwest scramble to get your day started right!   I am venturing into another round of the 21 Day Fix Extreme and this breakfast is PERFECT for that!  I tend to spice up my meals when I do a round of the 21 Day Fix Extreme – nothing like a blast of flavor to keep you satisfied!  I topped this with some hot sauce and ground pepper – so. yum.

Ingredients
  1. Olive oil cooking spray
  2. 1/2 cup diced veggies (I used red and yellow peppers, red onion and zucchini)
  3. 2 eggs
  4. Cilantro
  5. Hot sauce (to taste)
  6. Ground pepper (to taste)
Instructions
  1. Spray 8" skillet with olive oil cooking spray
  2. Add veggies & cilantro (optional) and saute lightly on medium heat.
  3. Whisk eggs and add them to the veggie mixture and scramble.
  4. When cooked through, plate the eggs and top with hot sauce and pepper, garnish with cilantro.

    Do you know if this freezes well? I’m awful about making time for breakfast, so I try to makes things in bulk once a week, freeze, and thaw out the night before use. This looks fantastic!

      I have not tried freezing it!
