Slow Cooker Cilantro Lime Chicken

I LOVE this recipe! Not only is it super easy and quick, but it is packed FULL of flavor and it is SO versatile! Serve it up on a whole grain tortilla, over a bed of brown rice or just with some veggies! Easy peasy and delicious!

Ingredients
  1. 3 large boneless, skinless chicken breasts
  2. Juice of 1 lime
  3. 2-3 T Olive Oil
  4. 1/2 yellow onion, chopped
  5. 1 cup fresh Cilantro, chopped
  6. 2 cloves garlic, minced
  7. 1t Chili powder
  8. 1 bag frozen 3 pepper & onion blend (no sugar added)
  9. Sea salt & pepper to taste
Instructions
  1. Place all ingredients into your slow cooker
  2. Cover & cook on low for 5-6 hours until chicken shreds easily with a fork
Notes
  1. Top with fresh avocado and serve with 1/2 a sweet potato and some veggies.
  2. Fix Container Counts: 1 R, 1/2 G (depending on how many of the veggies you dish out from your slow cooker), 1 tsp.
