Seasoned Sweet Potato Mash

I love having a sweet potato in the afternoons during the kids nap times. It is easy and quick to fix, flavorful and it fits the bill for the 21 Day Fix and one of my yellow containers! This seasoned sweet potato mash is a PERFECT snack for the 21 Day Fix Extreme because it is spicy and flavorful. I found that I went on a big spicy kick when I was doing 21 Day Fix Extreme and Countdown to Competition. The spicy foods help!

Seasoned Sweet Potato Mash

The Mrs. Dash Salt-Free seasonings are fantastic for this program (and in general!) I love adding all kinds of seasonings to my dishes – you just need to make sure there is no added sugar or fake ingredients – and you are good to go!

Add some hot sauce to it for some extra spice, stir in some ground beef or turkey if you need to get an extra red in!

This is a snack I have almost daily. Sweet potatoes are so delicious, nutritious and EASY!

Ingredients
  1. 1 medium sweet potato
  2. Mrs Dash Fiesta Lime Salt-Free Seasoning
  3. Cilantro for garnish
  4. Hot sauce (optional)
Instructions
  1. Wash sweet potato well and wrap in damp paper towel. Pierce the potato several times with a knife.
  2. Cook in microwave for about 4 1/2 minutes or until soft (I usually just press the 'baked potato' setting)
  3. Measure out one yellow of sweet potato
  4. Season to taste
