Grilled Pesto Shrimp Kabobs

This recipe screams SUMMER TIME! We enjoyed this meal on our back patio a few nights ago and it was really the perfect Summer dinner! These Grilled Pesto Shrimp Kabobs are 21 Day Fix and 21 Day Fix Extreme approved and the did not disappoint! They were so full of flavor and paired wonderfully with the grilled veggies we had! I chopped up a bunch of veggies I had stock piled in the fridge – zucchini, mushrooms, onions, bell peppers – and sprayed them with a little olive oil and threw them on the grill. These were just pure delicious-ness right off the grill. Basili (my husband) loved them and the boys enjoyed them too!

Ingredients
  1. 1 pound frozen, pre-cooked jumbo shrimp
  2. 1 cup fresh basil leaves
  3. 2 cloves garlic, minced
  4. 1/4 cup Parmesan cheese, shredded
  5. 3 T Olive Oil
  6. 1/8 tsp sea salt, or to taste
  7. 1/8 tsp black pepper
  8. 1 container cherry tomatoes
  9. Wooden skewers
Instructions
  1. Place shrimp in a bowl or gallon size zipper bag, set aside. (I let mine thaw so I would be able to skewer them easily!)
  2. In food processor, pulse basil, garlic, Parmesan, salt, and pepper - add olive oil while pulsing until smooth
  3. Combine pesto and shrimp in bowl/bag and mix well. Marinate in refrigerator for at least 30 minutes before grilling.
  4. Soak wooden skewers in water for 30 minutes before adding shrimp.
  5. Skewer shrimp and tomatoes
  6. Turn grill on high heat and place the kabobs on the grill for 5 minutes on both sides or until lightly charred.
  7. Serve and enjoy!
Serving Suggestions
  1. I paired this recipe with grilled vegetables, perfect Summer dinner! I sprinkled a little extra Parmesan on the shrimp before grilling. This is optional, just be mindful of your blues.
21 Day Fix Counts
  1. 1 Red (shrimp), 1 spoon (pesto), 1/2 Green (tomatoes), 1/4 Blue (Parmesan)
  2. *I measure mine out in the containers when I am doing an active round of the 21 Day Fix - I counted the pesto as only one spoon and 1/4 blue because you will discard a lot of the marinade.
