Banana Bread Overnight Oats

These Banana Bread Overnight Oats are my latest breakfast obsession! I am pretty routine when it comes to breakfast – I love my eggs and oatmeal, but I needed something to change it up a little bit and WOW! These hit the spot! They are sweet, filling and have SO much flavor – truly a delicious way to start my day!

I usually prep 3 of these for the week on Sunday – they stay good for about 3 days, so that makes this super meal-prep friendly!  These are my current go-to and I HIGHLY recommend you give them a try! I am currently doing the Master’s Hammer and Chisel program and this fits right in with my meal plan – along with the 21 Day Fix and 21 Day Fix Extreme – try it and let me know what you think!

These are my latest breakfast obsession! They are delicious, quick and easy to grab! I LOVE them and I think you should try them right NOW! Grab a jar or container, follow the instructions, mix it up, seal and stick in the fridge. I eat mine cold. Enjoy!

Ingredients
  1. 1/2 large ripe banana, mashed
  2. 1/4 cup old fashioned oats (or gluten-free)
  3. 1/4 cup (heaping) plain Greek Yogurt
  4. 1/2 cup Unsweetened Almond Milk
  5. 2 tsp Chia seeds
  6. 1/2 tsp cinnamon
  7. 1/4 tsp vanilla
  8. 1 tsp pure maple syrup
  9. 1 T pecan pieces (optional)
Instructions
  1. In a mason jar or container with lid, mash the banana and add the rest of the ingredients.
  2. Stir to combine
  3. Seal and place in refrigerator
  4. In the morning, eat and enjoy!
Side Note
  1. I make 3 of these at a time and they are still good by the 3rd day - definitely helps to save time prepping these all at one time!
Container Counts
  1. 1 Purple, 1 Yellow, 1/2 Red, 1/2 Orange (or 1 Orange if you use the pecan pieces)

      You can omit them or use any kind of seed. I add them to help with getting my orange container in – you could use pecan pieces. 🙂

      You CAN – but it will completely change the recipe, the yogurt thickens them up. HMM Are there non-dairy yogurt options?

    Is there a way to ripen bananas? I’m buying groceries on Sunday and well there are no ripe bananas so I would have to wait till mid week to make this but I really want to prep on Sunday. Any suggestions?

      Hi Mary – YES! If you put the bananas in a brown paper bag with an apple or 2, that will help them ripen faster. I hope that helps! (sorry for the late response, this message hit my spam folder for some reason!)

    Do you heat it up with n the morning? Or eat it cold? Also instead of chia seeds you suggested pecan pieces, are walnuts or almond slivers ok? Is that a direct substitute? Meaning 2 tsp of the nuts?

      I eat it cold. Yes – any kind of chopped raw nuts would be fine – I would do 1 T of those. 🙂

    Can u sub the almond milk with water?? I’m doing 21 df and was under the impression it’s a treat swap. Am I wrong??

      4 oz of unsweetened almond milk is FREE! 🙂

    So good! I don’t eat much yogurt on the fix because I need flavored yogurt or a lot of sweetner. But the 1 teaspoon was actually enough since the mashed banana helped sweetened the whole thing. Thanks for the recipe!

    I made these last night – I omitted the chia and used steel cut oats and 1% milk, also added a tbsp of all natural PB but all the same measurements – it’s very runny… is it suppose to be? Haven’t tasted it yet!
