Bacon Cheeseburger Skillet

This Bacon Cheeseburger Skillet was AH-MAZING! You heard me! No burger patty molding for me tonight – just throw everything into the skillet and simmer for a bit. Serve open-faced over a bed of lettuce or in a pita pocket. I had already used my yellows for the day, and having this over lettuce was delicious, crisp and fresh! I loved it! Basili loved his in the pita pocket – the boys both ate theirs sans bun. Noah pretty much destroyed his plate and Zach is in the picky preschooler stage but still managed to eat all of it (except for the tomatoes – HA!!!)

I used turkey bacon and next time I make this, I will cook them BEFORE browning the meat so the slices get more crispy! We love a good burger at our house and I thought bacon sounded pretty darn good – a change up from the usual menu, for sure! So, voila! Dinner is served. I am loving these one skillet meals – easy on the clean up and REALLY simple to make! I served these with some baked Parmesan Zucchini sticks – delicious! This would also pair nicely with some sweet potato ‘fries’. 🙂

This was a fun and EASY spin on a bacon cheese burger - no patty-making for me tonight! Family approved!

Ingredients
  1. 1 lb lean ground beef
  2. 4 slices turkey bacon, coarsely chopped
  3. 2 tsp Dijon mustard
  4. 2 tsp Worcestershire sauce
  5. 1 tsp garlic powder
  6. 1/2-3/4 cup red onion, finely diced
  7. 1 (14.5 oz) can diced tomatoes, drained
  8. 3/4-1 cup cheddar cheese, shredded
  9. Sea salt & pepper, to taste
Instructions
  1. In a 12" skillet, cook turkey bacon until done to your liking. Remove and dice the bacon into small pieces.
  2. Brown beef, breaking it up as it browns.
  3. When beef is brown, add all of the ingredients and mix well.
  4. Cover and let simmer on low for 10-15 minutes, stirring occasionally.
  5. Sprinkle cheese over meat, recover until melted.
  6. Serve over fresh lettuce or in a whole grain pita pocket

    Very tasty. I used fire-roasted tomatoes and did not drain – didn’t want to lose the flavor. Also used a Mexican blend finely shredded cheese.

    This. Was. De. Li. Cious!!! Best healthy “hamburger” I’ve had. I used ground turkey instead of beef, and I think my family is still too attached to the traditional bacon cheeseburger to really appreciate this. But It was so good. Honestly can’t believe I can eat it on the 21 Day Fix diet. Thank you thank you thank you!

    What brand Worcestershire sauce do you use? Is there a clean one? We tried it tonight and it was delish!

      I use the Lea and Perrins – it may not be 100% clean, but it had the least amount of ingredients…I need to find a ‘clean’ one! 🙂 Anyone have a suggestion?
